Courgette Boats

Very easy recipe for courgettes filled with mince and baked.

Suitable for 2 boats. Suggested 1 boat each as a side dish.

# Equipment

  1. Teaspoon.
  2. Frying pan.
  3. Metal oven pan.

# Ingredients

  1. 1 Courgette
  2. 1 Onion
  3. Garlic to taste
  4. 100 grams mince (beef or pork)
  5. Parmesan (grated)

# Preparation

  1. Preheat the oven to 175 °C.
  2. Cut the courgettes in half longways.
  3. Using a spoon hollow out the courgettes
    • Put the removed flesh into another bowl.
    • Leave about 0.5 to 0.75cm of courgette flesh behind.
  4. Thinly dice the onion.
  5. Thinly slice the garlic (or use frozen garlic).

# Method

  1. Put butter or oil into a pan and take to a medium heat.
  2. Add the mince to the pan and brown (if liquid is released keep frying until it has evaporated).
  3. Add the onions and garlic to the pan and cook until they start to soften.
  4. Add the courgette flesh to the pan and season to taste.
  5. Sauté until the courgette flesh has reduced in size.
  6. Take the mince mixture off the heat.
    • If you are using a non-stick pan, transfer the mixture to a bowl so you don’t scratch the pan.
  7. Add some parmesan to the mixture and mix it up.
  8. Fill the hollowed out courgettes with the mixture.
  9. Place in the oven pan and into the oven for 20 minutes.
    • Add some parmesan on top about 2-3 minutes before you take them out of the oven.

# Serving

When serving its a good idea to cut each boat in half, this makes it easier to fit them on the plate. If serving as a main, a good option is to serve with rice.
