Courgette Boats
Very easy recipe for courgettes filled with mince and baked.
Suitable for 2 boats. Suggested 1 boat each as a side dish.
# Equipment
- Teaspoon.
- Frying pan.
- Metal oven pan.
# Ingredients
- 1 Courgette
- 1 Onion
- Garlic to taste
- 100 grams mince (beef or pork)
- Parmesan (grated)
# Preparation
- Preheat the oven to 175 °C.
- Cut the courgettes in half longways.
- Using a spoon hollow out the courgettes
- Put the removed flesh into another bowl.
- Leave about 0.5 to 0.75cm of courgette flesh behind.
- Thinly dice the onion.
- Thinly slice the garlic (or use frozen garlic).
# Method
- Put butter or oil into a pan and take to a medium heat.
- Add the mince to the pan and brown (if liquid is released keep frying until it has evaporated).
- Add the onions and garlic to the pan and cook until they start to soften.
- Add the courgette flesh to the pan and season to taste.
- Sauté until the courgette flesh has reduced in size.
- Take the mince mixture off the heat.
- If you are using a non-stick pan, transfer the mixture to a bowl so you don’t scratch the pan.
- Add some parmesan to the mixture and mix it up.
- Fill the hollowed out courgettes with the mixture.
- Place in the oven pan and into the oven for 20 minutes.
- Add some parmesan on top about 2-3 minutes before you take them out of the oven.
# Serving
When serving its a good idea to cut each boat in half, this makes it easier to fit them on the plate. If serving as a main, a good option is to serve with rice.
